Hey fans! Like most of the North East, I'm getting dumped on with snow and it sucks. Of course my car is low to the ground and gets stuck on little piles of snow! Anyways, today is definitely a stay inside and keep warm kind of day. So why not cook?

This is my Mom’s recipe for a Punch Bowl cake. Much of the literatures I’ve read refer to it as a southern dish. Well, Mom lived in Memphis, TN. You can get a little more southern but not much.
I Googled Punch Bowl Cakes and I searched Pinterest. I found many variations. However, most of them used canned cherries between the layers and many used Jello pudding of some type.
I have also searched through our cookbooks. We have acquired hundreds since our first Kindle offering. I am still looking for an exact match.
The Punch Bowl Cake is a very interesting cake in that you “kinda” build it from the first layer of cake, the foundation to the final layer of Cool Whip. It was in my Mom's handwriting. She was forever cutting recipes from the newspaper and experimenting with variations. 
The layers of Pineapple make this cake super moist. There is no slicing involved. You just take a big spoon and dig in. After it has chilled it's like an ice cream dessert.
